A.S. Degree - Culinary Arts
Principles of food service production, food service sanitation, nutrition, stocks and sauces, American regional cuisine, dining room management, introduction to baking and pastry, storeroom operations, meat cutting, international cuisine, and French cuisine are all included in the extensive curriculum, supplied by the Associate of Science degree in Culinary Arts program.
A.S. Degree - Baking and Pastry Arts
Instruction in the art and the science of the baking profession is found in the Associate of Science degree in Baking and Pastry Arts. Quick breads, yeast breads, cakes, frozen desserts, centerpieces, candies, cookies, and various pastries are introduced, along with the vast array of tools and equipment necessary to produce them.
